to sustainable agriculture defines much of what we do on the
farm and who we are. The farming method we choose to practice is
an age-old farming approach that allows our products to grow naturally
to achieve optimum flavor and nutrient levels. We are deeply
dedicated to “Growing
vegetables slowly and gently, in full accord with nature"®.
In keeping with that goal we are in a constant
state of discontent, as we always look for new ways to enhance the
soil and farm the way our great-grandfathers did. We believe that
by rebuilding the soil naturally it will return to us a sweeter,
better-tasting product.
Sustainable agriculture is a victory for
everyone: You win because we can offer you a product with better
taste; our children and grandchildren win because the soil we
leave to their generations will continue to be alive and productive;
and your guests win, because you are creating plates with the highest
quality products we believe you could possibly put on them!
Sustainable
agriculture is a broad spectrum approach to natural farming. This
particular agriculture system allows us to provide you the optimum
in flavor, yet not ruin the land or contaminate the people, environment
or ozone. In this type of system, agriculture can survive and
thrive long term. As opposed to conventional farming, which can
be defined as a mining process in which each year the soils are
depleted of vital nutrients, sustainable agriculture is
a building of the soil year after year.
Organic or certified organic
stands for some of the same things, but organic means that a product
is grown without the use of chemicals or pesticides that could
harm you. Sustainable agriculture, or Beyond Organic™ is broader
conceptually. Organic is the elimination of chemicals and synthetic
fertilizers from the process, and while that removes the bad elements,
we believe it is not a completion of the agricultural process
until the bad is replaced with the good, as in sustainable practices.
We use the very green cover plants that grow in fallow land
as recipe ingredients in a tea compost. These put the proper nutrients
back into the soil.
Our beliefs and methodologies show that sustainable
agriculture offers the greatest opportunity for maximum flavor,
nutrients and shelf life in the products we are proud to hand-harvest
for you each day! |
