A plant has something different to offer on the plate at every stage of growth. Each has a different textures, flavors and characteristics that are unique and interesting. 

The Chef’s Garden uses a standardized terminology for each product group so that you have a more accurate way of ordering the precise stage of growth that you are looking for. Not only do our product sizes offer you choices for your menu, they allow us to reduce waste by using every part of the plant.

NOTE: Product sizes listed are approximate and will be dependent upon the variety and season harvested.

Cotyledon stage comes before the first true leaves appear. These leaves are called the cotyledon and are often difficult to identify because they do not resemble the mature leaf.    
Microgreen
(Micro)
Micro stage is how a plant is referred to when the first true leaves appear, which make the plant genus identifiable.    
MicroPlus MicroPlus is a larger Microgreen,
but not yet a Petite plant.
Also called Greenhouse (gh) Petite
   
Demi   1½” – 2” 6 – 7” overall

Petite Petite stage occurs when the plant begins to form leaf clusters. 2½” – 3½” 7 – 8” overall

Petite Plus A slightly larger Petite plant,
but not yet an Ultra.
   
Field Petite Some products grown in the field, as opposed to in the greenhouse, grow differently, and as such we distinguish them as Field Petites.    
Ultra Ultra stage follows as the plant gains height. 3” – 4” 8 – 9” overall

Baby Baby stage of plant occurs when the plant produces an actual head or root depending on the variety. 4” – 6” 9 – 12” overall

Young Young stage is when a plant is nearly full grown. 6” – 7” 12” – 14” overall

Full Size This is a full size plant.  Also referred to as Perfect. Full Size 14 – 16” overall

Flowering
(Bud or Bloom)
Flowering stage occurs when a variety begins to bud and blossom.    
Seed Seed stage occurs when the plant comes to full maturity and prepares to reproduce.
